Janine: Fire away!
Michael: What do you call the one who’s the greasy badass who presides over the red-hot coals to create char-encrusted proteins of perfection?
Janine: Ha I know, pit boss or pitmaster, pick one.
Michael: Great! One more, and this has to do with the meat, and it presents a challenge. What do you call the flavorful outer layer of crust that forms on a brisket?
Janine: You got me there, Michael. No idea.
Michael: It’s called bark. But no worries. People don’t need to know all this to enjoy their barbeque. Have a good one!
